Beetroot is a super vegetable that can do wonders for our body, a blessing to our skin and hair. It is packed with vitamins, minerals and also acts as an immunity booster. It is also rich in fiber and less in calories thus acts as a perfect food to add to our diet. Having beetroot 2-3 times a week can benefit our health in multiple ways. Yes! Beetroot is an absolute healthy food, then I guess it should be one of the foods that our little fussy eaters really hate to eat. Then it’s time for us mummas to make them like this rooted veggie. So here I am sharing an easy breakfast/dinner recipe “beetroot potato wrap”. Mashed potato and beetroot sauteed with spices along with a little spread of mayonnaise/ketchup wrapped in a chapati is a delight. This is one of the quick lunch box recipes for your kids that you can surely expect an empty box in return.

Ingredients:
- Beetroot- 1small
- Potato- 2
- Onion- 1
- Bay leaf-1
- Sabji Masala-2 TBSP
- Mayonnaise
- Salt – As per taste.
- Chilli powder- As per taste
- Turmeric powder- 1 TSP
- Garam masala – 1 TSP
For making chapati:
- Wheat flour- 3 CUPS
- Salt- 1TSP
- Oil- 2 TSP
- Water- As required
Preparation:
First, peel the beetroot, potato and cut them into large size pieces. Now pressure cook for 3 whistles. The ratio of the potato and beetroot should be in equal portion.
Now grate the beetroot pieces and smash the potato and keep them aside.
Meanwhile, you can prepare the chapati dough.
Here I took 3 cups of wheat flour. Add salt, a Tbsp of oil to it. Now add water for binding and knead the dough. cover it with a damp cloth or lid and rest the dough for 20 min.
Roll the chapati with a rolling pin and fry the chapati on a hot pan and keep them aside.
Now take a pan, add 2 Tbsp of butter to it, add 1TBSP of Jeera/cumin seeds and 1 bay leaf. Now when the cumin seeds start spluttering add the grated beetroot and potato to it.
Now add salt, chilli powder, sambar turmeric, 1 tsp of garam masala, 2 TBSP of sabji masala to it, and saute them until the masala leaves the raw smell.
Now take each chapati, apply mayonnaise/ ketchup or you can apply both. Then add beetroot masala to the chapati and garnish with onion slices. Then roll the chapati as shown in the picture.
Yummy beetroot wraps are ready to be served.
Note: Here in this recipe I have used “Everest kitchen king sabji masala” which is the key ingredient. It enhances the overall flavor of the dish.
